Carolina Custom Cooker Portable Units are designed with the keep it simple method. There are no dampers to adjust, or fires to keep a close watch on. These are gas fired cookers. This allows for substantial consistency in cooking temperature everytime. The pressure regulator allow you to dial in a temperature and keep it there. Each gas burner (1 on small, 2 on large) is covered with a flavorguard to prevent flare-ups and charing. There is also an optional smokebox that allows for smoked flavor to be added to the meat while cooking. CCC Portable Units are excellent for a butterflied whole hog, or large amounts of chicken or pork butts.
